Chipotle chicken bowls: 346 cal/ 35g protein
Pretty proud of myself for this meal prep.
- Marinated chicken breast in a chipotle based marinade, then grilled.
- Sautéed peppers and onions (added a bit of the leftover marinade to the sauté pan)
- 80g cooked rice
If I had been making the rice fresh I probably would’ve done a cilantro lime rice. But I was just using some leftover rice that we already had in the fridge and didn’t care to doctor it up!
I’ll probably add some salsa and/or some plain greek yogurt to top it off.
