    Your potatoes are 1/10

    Lets do this next time, because your steak is WAY TOO GOOD for those potatoes (edit: yes, these are the Kenji López-Alt crispy potatoes):

    1. Preheat oven to 450 F
    2. Halve the potatoes
    3. Throw the potatoes in a pot, fill the pot with water. Salt the water, don’t skip this step. Bring the water to a boil.
    4. When the water is at boil, lower it to just enough to keep it boiling but not a full roil. This prevents your potatoes from getting a bit goopy.
    5. Boil the potatoes until they’re starting to fall apart, around 30-45 minutes (yes, you read that right). Edit: longer time is for crowded pots, if you’re cooking for a lot of people, get a bigger pot
    6. Drain the potatoes
    7. Put the potatoes back in the pot, and let the residual heat of the stove steam off the excess moisture. Move them around a bit. Are they falling part somewhat? Good.
    8. Crush some garlic – like 5-8 cloves. If you have thyme, especially fresh, pick off a bunch of leaves. Fill a small pan with a layer of olive oil, and bring to medium low heat. Once it’s hot, fry the crushed garlic and thyme in the pan, until golden brown. Then use some sort of mesh strainer to dumb the oil in another small pan, just to catch the oil and separate the aromatics from the oil. Save everything.
    9. Once the oil has cooled down, in a bowl, or the pot itself, you want to mix your potatoes with that oil and a generous amount of salt, pepper, and any other seasoning you like to day (onion powder and paprika is not a bad idea).
    10. Lay out those potatoes on a pan, and put that pan in the oven for about 40-50 minutes, until the potatoes are super crispy and browned.
    11. Top the potatoes with the crispy aromatics you used to flavor the oil.
    12. If you have any fresh herbs – parsley or chives, for example – chop those and sprinkle them on, too.

    You literally could’ve just finished and seated the potatoes in the same pan you cooked the steak in while it rested and had 5x better potatoes.

    I saw the steak and said, ok soldier. Maybe yoy could render the fat a bit more but thats fuckin stellar in my book. Then I saw the potatoes and said, boy if you dont seaspn those things. Then I saw you acknowledged the potatoes looked bad but the steak looks good and who cares and now Im right back with you. Fuck those potatoes. Great steak.

    I’ve eaten and cleaned up, and can address the potatoes: I mashed em up, and put some butter with salt and pepper on, I just like to boil them and then mash it up on my plate, less to clean that way. Please forgive me everyone for worrying you
