This is how you make this incredibly easy and delicious Creamy Chicken Gnocchi Soup.
Ingredients:
– (2) Large Chicken Breasts
– (2 tbsp) Olive Oil
– (2 tsp) Salt
– (1 tsp) Oregano
– (1 tsp) Thyme
– (1 tsp) Old Bay (or similar)
– (1) Onion
– (1) Large Carrot
– (2) Stalks of Celery
– (3) Cloves of Garlic
– (1/2 cup) Flour
– (1 qt) Chicken Stock
– (1 cup) Heavy Cream
– (1 pkg) Gnocchi
– (2 cups) Raw Spinach
Step 1: Cook Your Chicken
Add a generous amount of good olive oil to a pan over medium-high heat. Add your chicken breasts and season the tops with salt, oregano, thyme, and Old Bay.
Sear your chicken breasts for about 8 minutes, flipping halfway, so you have a nice color on both sides. Remove your chicken onto a wire rack and set aside.
Step 2: Sauté Your Vegetables
Roughly chop your vegetables and add them right into the pot you cooked your chicken in. Sauté for about 8 minutes until they’re soft (but not browned). Add in your flour and stir everything until your veggies are nice and coated. This is your soup’s thickening agent.
Step 3: Simmer Your Soup
Pour in your chicken stock (mine is homemade, but store-bought is good, too). Add in your cup of heavy cream and stir everything well.
Wait until you start to see little bubbles in your soup and then reduce your heat and let everything simmer. You want the vegetables to be tender and for some of your liquid to cook down so all the flavors concentrate.
Step 4: Finishing Touches
Shred your chicken breasts and add those to your soup along with your gnocchi and spinach. Make sure you separate your gnocchi before putting them in your soup.
Let all of this simmer on low heat for 8 more minutes. This is a good time to give your soup a taste and see if it needs any additional seasonings.
Finish off with some freshly grated Parmigiano Reggiano and fresh lemon juice to balance your dish with some acidity.
I garnish mine with a drizzle of chili oil and some more Parmigiano Reggiano for an extra kick of flavor
