Basque region sirloin steaks, dry brined overnight. Served with Garlic mushrooms and oven chips!
The steaks came out a touch above what I prefer temp wise, but were delicious all the same!”

These two annoying drunk British chefs did a video where they ate steaks from every famous cow breed and those basque ones won. I want to try it.
