Forgive me for the text, I usually just post stuff to Instagram and forgot to save version of the raw images for Reddit.
General Review:
Overall I had a technically (like in terms of the mechanics of cooking) imprecise omakase experience – which is disappointing given some past great experiences at Shin.
Issues like:
1. dry/cold shari, sloppily cut and prepped neta (numerous pieces like the sayori and the katsuo I was served were mangled by high end sushi standards)
2. appetizers that mostly miss on a cooking + seasoning basis (hard/partially uncooked rice in kegani risotto – the rice wasn’t al denté, it was genuinely undercooked and seasoning things that I admit are more subjective – bland/unseasoned kindmedai but overseasoned/salty Chawanmushi)
Are difficult to justify at this price level.
It may have been an off night though – there were bright spots, the awabi appetizer was basically perfect and the ankimo was also done well in both preparations.
Sadly, the rest of the menu ran the gamut of disappointment from uni that tasted like mud to bland tasting and overcooked amadai, with over-seasoned katsuo akami to overly fishy saba it was just a general poor showing from a restaurant I quite enjoyed previously. I eventually stopped taking pictures because so much of it was just really bad so there’s a few courses at the end missing
Service-wise, Sushi Shin has never aimed to deliver an amazing service experience and that wasn’t any different today. I will note if you’re Chinese/speak Chinese I think the service is quite good, but if you are not then it’s basically like going to a place in Japan when you don’t speak Japanese. No issue on my end for the service but just wanted to give a heads up on the vibe.
TLDR: Might’ve been an off night but really bad overall.

i mean, ultimately it comes down to taste. but the strays on some of this knife work do look pretty rough
