Hey guys,
I rarely see sweet eggs, thought I’d share. Took me quite some looking and thinking and testing to finally end up with this here. I usually rotate between different vegetables, legumes and fruit to keep it interesting. It’s pretty optimized for health, like olives for hydroxytyrosol and oleuropein, mustard powder to break down glucosinolates, red beets for nitrates and so on. Some numbers may be a little confusing, which is because the meals (veggies) are pre-cooked for 4 days (62,5*4=250g).
For this dish I’ll probably reduce the amount of cabbage next time…it’s a lot to eat:
* 200g broccoli, 62,5g red beets, 1/4can beans, 5 olives, 1 garlic, mustard powder, herbs, spices, salt * 1 blood orange, 2 eggs, 0,5-1tbsp cocoa low fat, 1tsp xylitol, cinnamon, pinch of salt
For the eggs, I put them in a small pan, scramble a bit with a silicone spatula, let them sit until almost done, turn off heat, add xylitol, glycine, salt and cocoa powder, fold, put on a plate, add cinnamon.

* 125g cabbage, 50g peas, 1/4can lentils, 5 olives, 1 garlic, mustard powder, herbs, spices, salt
* 1,5 kiwi, 2 eggs, 0,5-1tbsp cocoa low fat, 1tsp xylitol, cinnamon, pinch of salt
Variation:
