For an extra $5, my local Thai restaurant goes up to 10 star spicy
I'm having a hard time conceptualizing what that would even be like.

Looks more like an insurance policy for the restaurant against people sending it back for being too hot.

Thais can be brutal. I went a little spot with a friend who was a regular.
I ordered crispy pad thai 5 star. The woman who sat us told me not to. Suggested I stick with medium
I went for the 5 star. And I cried and sweated. It was miserable and glorious. I could only eat half the order.
I finished it the next day for lunch. It was even hotter the second day.

If I order 10 by paying $5 more and it’s still the same old sprinkle of cayenne, we’re throwing hands.

My favorite local place does 1-10, with 10 being a full spoon full of the chili oil they use, but you can go as high as you want. They have a couple of regulars who get a 25, and one of the sons who works in the back gets a 40 lol. I usually get a 7 with extra chili oil on the side in case my tolerance is higher. I don’t risk any higher than a 7 though because sometimes who ever is cooking has a “heavy hand,” and it can be a little much lol.

I love spicy. Like as spicy as possible. I constantly tell Thai and Indian places to make it as spicy as possible, then add some more spice. I’m consistently disappointed.
There was one Indian place where I made friends with the owner. He would bring me a special (extra spicy) paste to add that he personally made for himself. That’s the only time a place has been spicy enough (and still maintained flavor).

I always tell my local Thai place to double their hottest 10 for me.

My local place only goes to 5, but on my first visit I told her 5 and she said “oh you like spicey?” I replied saying no one in this town actually makes anything spicy so yea, a 5. I got a 5☆. It was the best spicey beef noodles soup. I was not prepared but I still order it that way every time.
Side note, her spicy pork belly is killer.
