    That’s mold. Dust doesn’t form mycelium. Your owners are gross as hell and living in denial. There’s dust there, too, to be sure, but you’re running a mold factory. I don’t understand how the health inspector hasn’t shut you down.

    Have them get a power washer. Every nice clean kitchen I have ever worked in has power washed at least once a week and walk ins every 2-4 weeks

    Hi, hvac tech here. If the shelves look like this, you need to get your cooling unit cleaned as well, or this will only come back. A refrigeration company can do this service for you. Manager may not let it happen though.

    Great job cleaning this up, you are 100% doing the right thing. Your manager is dead wrong.
