Really nice, but be careful of that paper lol maybe just trim it with scissors before you bake, I’ve set a few oven fires lol

What is your hydration level? 85%? 90%?

On YT I found a video of a French bakery and they were using something like 50% flour and 50% semolina, and I have been tempted to make it like thatl, they were using different toppings at the end Since you have 1 year perfectioning your experience, what do you think of using semolina?
