“Today’s dinner was a rustic, hearty dish that brought incredible flavors to the table. I started with a whole chicken, cut into pieces and seasoned to perfection, then browned alongside sausage for extra richness. After sautéing onions, carrots, celery, and garlic, I deglazed the pan with wine, added tomatoes, tomato paste, Italian seasoning, and brought everything together with chicken stock for a slow simmer. The result? A comforting, sauce-filled masterpiece that’s perfect over pasta, polenta, or just enjoyed with crusty bread.

Simple Recipe:

Ingredients:
• 1 whole chicken, cut into pieces
• 4 sausages (your choice), sliced
• 2 carrots, diced
• 2 celery stalks, diced
• 1 onion, chopped
• 4 garlic cloves, minced
• 1/2 cup white or red wine
• 16 oz canned tomatoes
• 2 tbsp tomato paste
• 2 tsp Italian seasoning
• 1 cup chicken stock
• Salt and pepper to taste
• Olive oil for browning

Instructions:
1. Heat olive oil in a large pan or Dutch oven. Brown the chicken pieces and sausage, then set aside.
2. In the same pan, sauté onions, carrots, and celery until softened. Add garlic and cook for 1 minute.
3. Deglaze with wine, scraping up any browned bits from the bottom of the pan.
4. Add tomatoes, tomato paste, Italian seasoning, and chicken stock. Stir to combine.
5. Return chicken and sausage to the pan, season with salt and pepper, and simmer on low for 45 minutes to 1 hour.
6. Serve over pasta, polenta, or with crusty bread.
