This was my first ever attempt at making macarons but I am experienced in making meringues. I am wondering if I put too much of my batter onto the tray or if I over mixed before piping, etc. I am hoping to nail these as a surprise for my husband.

    It looks like the batter was overmixed. When properly macaronaged, the macs will spread juuust a little when you bang the tray to remove air bubbles. If overmixed, they’ll spread out a lot, like they did here.

    Everything else looks pretty good, though—you’ve got feet!! I’d mix your next batch quite a bit less and make sure the ribbon of batter takes a good 10-15 seconds to dissolve back into the bowl, then transfer to your piping bag. Undermixed is almost always better than overmixed.

    Since you’re at the beginning of your macaron journey, I’d recommend checking the consistency every few folds (once you have all the dry ingredients totally mixed in) so you can really take note of the changes in the consistency.

    You’ll be a master before you know it! 🙂
