I’m trying to get over pneumonia and my husband is recovering from major surgery, so needless to say neither of us was feeling up for our regular meal prep session. So I leaned in to easy this week, just some chopping and I was done in less than 30 minutes. Thankfully we have some freezer meals to pull from for dinner throughout the week, so that won’t be a worry either.
If you’re feeling overwhelmed by the idea of meal prepping, it’s okay to start simple.
Raspberry Yogurt (raspberry Greek yogurt, fresh raspberries, chocolate protein powder – 280 calories, 34g protein)
Turkey Sandwich and Veggies (keto bread, Dijon mustard, thin sliced pepper jack, sliced turkey + broccoli, cauliflower, carrots, cucumber, sugar snap peas, grape tomatoes, mini sweet peppers + green goddess dressing, nonfat Greek yogurt – 285 calories, 28g protein)
Fruit Bowl (pineapple, mango, apple, strawberries, mandarins + blended cottage cheese, vanilla nonfat Greek yogurt, protein granola – 235 calories, 12g protein)

Do you have issues with the bread getting soggy or do you prep it day of?
Looks good! I did something similar last week actually since I was sick too hah simple goes very far
Do the mini peppers have seeds, like the bigger ones do? I’ve never tried them bc I thought it would not be something I could just eat at my desk.
