  1. Proportions for one loaf in grams:

    * 450 flour 
    * 315 water
    * 90 starter 
    * 9 salt 

    Process: 5 stretch and folds, overnight cold proof, bake at 550 for 25 minutes, toast at 500 for 8 minutes
