Creamy Parmesan Tortellini Soup
Ingredients:
1/2 stick salted butter
1 tbsp olive oil
4 stalks celery, medium diced
3 carrots, peeled, medium diced
1 white onion, medium diced
3 cloves garlic, grated
1 tsp oregano
1 Good Seasons Italian Dressing Packet
1 bay leaf
3 leaves basil, rough chopped
2 cans diced tomato w/ liquid
1 tbsp coarse sea salt
4 c chicken broth
1 bag frozen tortellini (we like the minis)
1 container baby spinach
1 c heavy cream
1/2 c grated parmesan cheese
black pepper
In a large pot, heat olive oil and butter. Add celery, carrots and onion and saute to start sweating down until veggies become translucent. Add garlic and stir to combine. Stir in oregano, Good Seasons Dressing Packet and add 1 bay leaf and basil. Add diced tomatoes and stir. Continue stirring and add in sea salt and chicken broth. Cover pot and let soup simmer on low for about 45 minutes. Pull out bay leaf. Add tortellini, baby spinach, heavy cream and parmesan, stirring to combine and bring back to a simmer. Add some fresh ground black pepper. Serve.
