500g bread flour
350g water
~80g starter
10g salt

Mix.
Stretch and fold one time when I remember but very thorough initial mix with hands. Proof at room temperature (~74°) for about 14 hours. Fridge for 6-8 hours. Oven lid on @ 450° for 25 and lid off at 410° for 15.
