we are FINALLY making some bread on here, and this crispy focaccia one’s been very highly requested. focaccia’s been… really on my mind, and in my stomach lately, and this is the foolproof recipe i’ve been using to feed my addiction. i have made, and maybe eaten, four loaves in the past two weeks. so look no further if you too… dream of a perfect focaccia.

Recipe ingredients:
FOR POOLISH
500g bread flour
500g water (27C/80F)
0.4g instant yeast

FOR FINAL DOUGH
500g bread flour
250g water (41C/105F)
20g salt
1000g poolish /all of your poolish

my focaccia schedule:
day 1 evening – make poolish
day 2 morning – make final dough and let bulk ferment + fold
day 2 evening – divide dough into 350g and store in fridge overnight
day 3 morning – take dough out an hour before baking, then shape dough for baking

  8. The focaccia looks lovely! I also love that there’s not too much kneading involved. One question, I noticed you had 4 pieces of dough proofed but only baked 2 of them. Did you bake the other 2 pieces too or freeze them to bake later? I would love to try out this recipe but the quantity might be too much for me in one go.

  9. I find the poolish to be underrated and underutilized. I prefer this method over feeding and maintaining a starter. In a Ming Arthur method, they only made enough poolish to substitute as the yeast. So this method is different and I’m interested in trying it out.

  19. i am very jealous of the Italians who can make super airy and fluffy focaccia. I bought the premade mix from Trader Joes and it came out pretty dense. Still very delicious but I want a soft, tender focaccia. Once you try a good one, you'll never go back.

  20. Great video! I don't know why but every time I see focaccia it gives me sort of giant scallion pancake (葱花大饼) vibe lol… I'll definitely gonna try it with fresh scallions and sesame on top!
