I cannot stop thinking about this incredible pasta dish that I ate while in Rome two summers ago. The restaurant where I had it is called Sciuè Sciuè Cucina in Monti. As their menu changes regularly, I unfortunately cannot easily look up the exact ingredients that were in this dish. I would really like to attempt to replicate this dish myself, and the biggest question I had was just how to go about making a similar sauce. From what I can remember, the sauce had a very tangy and savory taste. I was also wondering if you all can tell what the green peppers in this dish are called (if they are not just regular bell peppers) and/or how they were likely prepared. I checked their ig to find the same dish and its kinda difficult. I can tell u for sure that that’s sausage (probably pork) that they salted with some oil and some white wine, let evaporate the whine and the sausage is ready. In the same pan they used the vegetable and this is the hard part because i can’t really recognize, can be a part of broccolo romanesco or puntarelle that are very famous in rome, can be cipollotto or as u said some green pepper. Anyway in the same pan where u cooked the sausage and removed it u put the vegetable and u cook it for some minutes (5-8 min more u cook them more they are soft) with some oil and some garlic. Once everything is ready u put the pasta al dente on the pan with the vegetables, add the sausage, some percorino cheese with a little bit of boiled water of the pasta and u mix it very well till u see a sort of cream that i see in the picture. On top of the pasta that little herb is dill. They used to use it in other pasta dish too.
Here i post u another pasta dish that they actually have in their menù which is similar (but not the same) to ur pic -> Fettuccine with pork sausage,broccoli, parmesan cheese, breadcrumbs and dill.
