Learning sourdough, but in regular loaf style, not a fan of round bread

    Those loaves look amazing! I would’ve brown them a bit more though, unless that’s what they look like mid-bake. I also recommend you use non stick steel baking pans. Bread tends to stick in glass.

    I’ve mastered active dry yeast, but I’m a novice sourdough baker, got my starter just right after a month of feeding, but I’m taking baby steps into it, so I’ve been doing loaf pans as well. Nothing wrong with that. These look great.

    When you proof the loaves in the fridge do you use a banner on or wht your baking them in.

    I would recommend, if you aren’t already g doing this, letting the glass pan heat up in the oven as you preheat. Then put it in and bake it. It helps give it a better crust.

    What temperature do you bake at when using the glass loaf pans? I have some metal and some glass loaf pans, but mostly use the glass for lower temp dry yeast breads. Interested in understanding if I can use the glass pans for regular sourdough too.

    And FWIW I gave away my dutch ovens because I prefer the quicker heat up/cool down of covered enameled metal roasters for my batards.
