Ingredients
• Cucumber – 1 Large
• Radish – 2 Medium
• Beetroot – 1 Medium
• Cherry tomato – 200gms
• Cabbage – 1 Medium
• Carrots – 2 Large
• Vinegar – 2 tablespoons
Dressing
• Mayonnaise – 4 tablespoons
• Red wine vinegar – 25ml
• Honey – 2 Tablespoon
• Pomegranate molasses – 1 Tablespoon
• Salt – to taste
• Pepper – to taste
Method
• A day prior, cut the beetroots and keep them in vinegar to soak. (This helps them become soft).
• Cut the veggies and keep aside.
o Cucumber – cut into thick cubes
o Radish – cut into thick cubes
o Beetroot – cut fine slices
o Cherry tomato – cut in halves
o Cabbage – cut fine
o Carrots – julienne
• Assemble them in the shape of a wreath and decorate with the pickled beetroot roses.
• For the vinaigrette, add the mayonnaise, red wine vinegar, honey, pomegranate molasses, salt and pepper. Mix well.
• You can add some of the vinegar from the beetroot for that extra kick and deep pink color.
