    100 percent how i do it in my bakery lol the dough is more resilient then people give it credit for.

    I legit don’t get it. People say you have to handle it with care like it’s a flower and every other video here is someone beating the shit of the loaf.

    Do I or do I not need to be gentle with it ? I am lost
