Ingredients
1 cup orzo pasta
* Water (for boiling)
* 1 tsp salt (for boiling)
* 1 tbsp olive oil
* Zest of 1 lemon
* Juice from ½ a lemon
* 3 cucumbers, diced
* 1 handful cherry tomatoes, halved
* 1 handful scallions, chopped
* 1 handful fresh dill and cilantro, chopped
* 220g feta cheese, crumbled
* ⅓ cup Kalamata olives, sliced
* ¼ tsp black pepper
* ½ tsp salt
Instructions
1. Bring a pot of salted water to a boil. Add orzo and cook for 10 minutes or until al dente. Drain and add olive oil, lemon juice, lemon zest mix well and let it sit.
2. Add cucumbers, tomatoes, scallions, dill, cilantro, feta, and olives to the bowl.Season with black pepper and salt. Toss everything together to coat evenly.
3. Serve chilled or at room temperature.
