Does this look like a good quality pasta?

    This pasta looks nice and thick with a rough texture—I bet it’s good. But the best way to judge its quality is to try it. Does it hold its shape well when cooked? Or does it get too soft or fall apart when cooked according to the suggested time?

    Check the protein weight. Should be at least 14 grams over 100 grams of pasta.

    More is better (better flour used)

    For dry italian style pasta I look for a light color like that it means it wasn’t cooked hot to dry it.

    Just check protein content. And should be not forced dried.

    The more pale the pasta, the better the quality. That’s why the mass market yellow pastas are garbage in comparison to the higher end pale pastas.

    Looks like DeCecco, this is my grocery store brand of choice in the US. I find it’s a little more textured than some other boxed brands so it holds sauce better.
