Melt butter in a pan on low heat. Add all ingredients listed above and whisk well to combine. Remove from heat and set aside at room temperature until ready to serve.
**Steak Bites**
For the Steak, I used ribeye. Slice into large bite-sized pieces. Season heavily with salt and pepper then sear on all sides in a stainless steel or cast-iron pan (if you don’t have one, non-stick will work, just won’t sear as well). Remove the meat from the pan and coat with your cowboy butter. Serve with the mashed garlic cauliflower (below).
**Mashed Garlic Cauliflower**
* 16 oz Frozen Cauliflower (I just use two 12 oz bags) * 2 oz. Cream Cheese (softened) * 1/8 tsp. chicken base/bouillon (not liquid) * 1/8 tsp. ground pepper * 3 tablespoon butter * 1/4 cup Parmesan * 1-2 cloves sautéed or roasted garlic * Chives or spring onion for garnish
Steam cauliflower in the microwave (I use the steam-in-bag kind) Open them up immediately (don’t wait the minute or so they tell you to on the package) and let the steam escape. Dump into a food processor or immersion blender.
Add your seasonings and flavors, cheese, garlic, etc. I would avoid using any liquid in this like heavy cream, we want the mash to be fluffy, not wet.

Looks very tasty. My daughter is obsessed with cowboy butter on steak! I think I will have to do this with some venison as I can’t have beef. This might be going on my meal plan the week after next!

When I have people over, I try to make dinners that no one would suspect was “keto”. This was a success for sure.
