Leftover Chicken fatteh recipe (serves 2-3)
Chicken and chickpeas:
-2 roast chicken or rotisserie chicken breasts (or just poach them if wanting to make from scratch)
-3 garlic cloves (sliced)
-1 Red chilli (sliced)
-1 can of chickpeas (drained)
-½ lemon juice
-Sumac
-Dill & parsley (finely chopped)
-Handful of toasted pine nuts
-100ml chicken stock (helps to moisten cooked chicken)
-salt
-olive oil & butter
Yoghurt dressing:
-250g greek yoghurt
-2 Tbsp tahini
-½ lemon juice
-salt
Pita chips:
-pita
-za’atar
-sumac
-salt
-olive oil & butter
Vermicelli rice:
-150g long grain or basmati rice
-75g vermicelli pasta noodles
-sprinkle of cinnamon
-olive oil

Everyone needs to make sure the chicken is back up to temp though, so cook it thoroughly.

When I buy rotisserie chicken it says to be consumed as a soon is it dangerous if I have it the next day in the night time
Nah….too much fuss for left overs, half of that isn't left overs anyway.
While the food looks amazing and delicious, I would hardly consider this a leftovers meal. Only one ingredient appears to be left over from the night before. I would still have to go to the store and buy all the other ingredients. (Who has sumac one hand?) Great content, just feels the point of video missed the mark.
Whenever I've got leftovers that I don't know what else to do with, I usually toss them into what I affectionately call my Kitchen-Sink Fried Rice. It's amazing how well it works sometimes!
