OK just gonna say parsley has no appreciable taste or is slightly bitter, but otherwise this would be great! Call me what you will but idc!

I actually gave this a shot after I saw it the last time and it was pretty good! It may have been bc my dish was glass Pyrex but the onions were not fully caramelized by the time the first hour was done and were threatening to burn after another 10 or so minutes, but they were still very well cooked. The coconut milk added a lot of good flavor, though I did find a small amount of cornstarch helpful to thicken it.
I added fresh basil at the end as well and it was very good!
