
Haven’t made a sirloin since I started trying to dial in my steak cooking. I made this for a girl I’ve been seeing and talked a lot of shit about how much I know (blind confidence) and feel like I got a bit lucky to be honest. Tasted amazing. My favorite is ribeye but my go-to is NY strip. Might have to try a couple sirloins again in the future tho.

Invest in a probe thermometer and set to 125 and rest to achieve this consistently
That’s a good medium rare.
Ribeye for the grill. Thick NY for reverse sear. At least this is my approach.
