radicchio + citrus winter sunshine salad

What a perfect happenstance that citrus season peaks in the dark months of winter! This crunchy and creamy, radicchio winter salad, is filled with colorful, sweet citrus and is just the sunshine we need to this time of year.

Ready in 20 minutes Serves about 4

dressing

3 tablespoons extra-virgin olive oil2 tablespoons honey1 tablespoon champagne vinaigrette2 teaspoons of fresh citrus juice 1/2 teaspoon Dijon mustard1 large clove garlic, peeled and grated 1/2 cup heavy whipping creamKosher salt & pepper to taste

salad

1 large head of radicchio, cored, washed & chopped into bite-sized pieces1 tablespoon of orange zest1 Blood orange, peeled, cut in 1/4 inch wheels1 Sumo citrus, peeled, cut in 1/4 inch wheels1 Cara Cara orange, peeled, cut in 1/4 inch wheels2/3 cup of Castelvetrano olives, pitted and halved 1/2 cup of roasted pistachios, lightly crushedShaved parmesan cheese

make the dressing:

In a Mason jar, combine the olive oil, honey, vinaigrette, citrus juice, Dijon, garlic, whipping cream and salt and pepper. Cover and shake well until cream starts to slightly thicken the dressing.

assemble the salad:

In a large bowl, pour desired amount of dressing over the chopped radicchio. Toss until the radicchio is well coated. At this point, you can add remaining ingredients, toss, and serve.

If you are preparing the salad for company, pour the dressed radicchio onto a platter and artfully arrange remaining ingredients on top. Toss all together when ready to serve!
