Steak tartare recipe:
8 oz (226 grams) beef tenderloin
2 tbsp Savorra mustard
1 egg yolk
1 1/2 tbsp (23 ml) Avocado oil
1 tsp (5 ml) Worcestershire sauce
1/2 tsp Maldon salt
1/2 tsp black pepper
1 tbsp brunoise shallots
1 tbsp brunoise Italian parsley
1 tbsp finely sliced chives
1 1/2 tbsp brunoise cornichons
1/2 tbsp finely chopped anchovies

  5. That's no Beef Tartar. That's your version of some sort of beef spread.
    Usually the tail part of tenderloin needs to be fine hand chopped or grinded, not cubed.
    Then you need to add a total of 13 ingredients (herbs, spices and other)
    egg yolk
    mustard
    salt
    black pepper
    chopped shallots
    chopped garlic
    chopped olives
    chopped pickled sweet or sharp chilly
    chopped sour pickled cucumber
    red paprika powder (spicy)
    chopped parsley
    chopped capers
    chopped anchovies.

    if one is missing then you have something else and not beef tartar.
    and its WOR-CHESTER-SHIRE sauce, "shire" like the lord of the ring shire

  7. Aioli is made with the whites my man. Kind of like thoum. What you made is more a mayonnaise. They are not the same thing.
