The tortillas got a little crispy but overall this was a really good, simple, and extremely easy dish to put together.

    We get these with beef every time they come around. I found that getting the tortillas to not overcook took me a couple of tries to get right, but getting it just right is so worth it. We make sure to poke the all of the tortillas throughly (I use a knife to do them individually while my husband cooks the meat) so they don’t puff up too much while they’re cooking. I only make two servings, and I roast them on the middle rack anyway to try to prevent overcooking them.

    Yours look so good though, I’m going to have to rearrange my meal plan for the week so I can have these tonight now! Have a great weekend!!
