🥣Sourdough Oatmeal Raisin Cookies

A classic old fashioned cookie that’s ferment in the fridge for up to 72 hours!

RECIPE⬇️

114g soften butter
150g dark brown sugar
100g sourdough discard or active starter that has been stirred down – room temperature
1 egg
5g vanilla
4g or 3/4tsp. cinnamon
1.5g or 1/4tsp. nutmeg
150g rolled or steel cut oats
2g or 1/2tsp. salt
2g or 1/2tsp. baking soda
140g AP flour
110g raisins

In a large bowl using an electric mixer beat the butter & sugar together until fluffy. Mix in the sourdough discard, vanilla, cinnamon & nutmeg. Add the egg, mix, then add the oats & mix again. Add the flour, salt & baking soda, mix until just combined. Stir in the raisins. Cover & ferment the dough in the refrigerator for 12-72 hours. Bake the chilled dough at 350 degrees for 10-14 minutes or until the cookies look dry but are still slightly soft in the middle. They will continue to firm up while cooling. This recipe makes 16- 3 inch cookies.
