
I’ve tried short ribs for the first time. They came off amazing. A few cherry chunks in the charcoal basket. As soon I hit the stall temp around 68C wrapped in aluminium foil. At 95C for 3hrs in cooler with some towels. Spend around 6hrs on 120C.
