Hi there, what is the best method to slow-cook this lamb shoulder joint? For how long? How do I make this really really tasty and roasting?

My favourite slow cooker lamb shoulder recipe is from this book https://www.worldofbooks.com/en-gb/products/slow-cooker-heaven-book-lorna-brash-9781911358459. Brown the lamb, put in slow cooker. Fry a large diced onion until soft (5 mins), add three diced garlic cloves for a minute, and then add to the slow cooker. Add 2tbs flour to the frying pan, slowly stir in 300ml lamb stock and 150ml red wine, bring to boil and add to slow cooker with 6 tbs apple sauce and some mint. Give it 7 hours on high, until falling apart. Then reduce the sauce into the best gravy I’ve ever had. Serve with roasties, minted peas, and the rest of the red wine. I’ve done this recipe several times, it’s the most reliable way I’ve got of doing lamb and comes out perfect every time.

Can I also ask a stupid question: what’s the different between a full lamb shoulder and one that is a joint?
