    I’ve made many chicken pot pies but I think this one came out the best. It’s from “Salt, Fat, Acid, Heat” and is the first time I’ve added the roux towards the end. I saved the fat from roasting the chicken Tuesday, so was able to use that (supplemented with butter to get up to 1/2 cup) to make the roux. Feeling so organized!

    This is the way. When I bake a whole chicken, the leftovers usually go into chicken enchiladas the next day.
