Wanted to hop on the Costco salmon sushi boat. Bought some fresh salmon, salt and vinegar treated, and frozen overnight (we did the regular salmon sashimi and then a lemon and chive salmon paste)! We also bought the kanikama, shrimp tempura, ume-boshi (all from "Weee!"), chu-toro, cucumbers, ika, shiso, tobiko (all of these are from our japanese market near us) kimchi (take out place from the other day) scallions, avocados, and some mochi donuts!!! We also got the nori from the japanese market near us.
The prep recipe I used is from Obsessive Cooking Disorder! Titled "Salmon Sashimi from Costco"

Frozen overnight doesn’t kill parasites unless your freezer gets extremely cold (below -30C). If your freezer doesn’t get that low, then it needs to be frozen much longer (a week at -20C).
