This recipe makes 5 medium sized pancakes for 310 calories, and 31g protein. They are super filling since they have a ton of fiber!
Recipe –
Wet Ingredients:
1 large egg, 85g greek yogurt, 1/2 cup unsweetened almond milk, 1/2 tsp vanilla extract, 2 packets fake sweetener of choice
Dry ingredients:
90g fiber gourmet flour, 1/2 tsp baking powder, 1/4th tsp baking soda, 1/4th tsp salt
Mix together wet ingredients thoroughly before adding in dry ingredients. Try to whisk until all clumps are gone. Pour onto a pan over medium heat and flip when lots of bubbles have appeared.
I used great value greek yogurt, which is a bit thinner, so I was able to get more pancakes out of it. If you use a thicker yogurt like Fage, you may end up with 4 pancakes rather than 5.
In my photo above, I topped it with 4 tbsp sugar-free syrup, and 43g strawberries for an additional 25 calories. <3

oooo. sounds and looks delicious! might try this with a flavored Greek yogurt.. like banana creme. that would be amazing!
