    Add starter after 1h and mix for 6-7 min
    Let rest for 30 min
    Add salt and water (bassinage)
    Let rest for 30 min
    Perform lamination and add cranberries and pistachios
    Fold and let rest for 45 min
    Stretch and fold 3x every 45 min
    After the final stretch let rest for 30 min
    Preshape and let rest for 30 min uncovered
    Shape and let rise on the fridge for 12-24 hours
    Next morning bake for 15 minutes covered at 250C and 20 min uncovered
