
Just tried an animal I've never cooked with and I was wondering how I had such a different experience compared to what the internet told me to expect.
Internet says it's a low fat alternative to beef, but I got anything but that impression.
This was the fattiest meat I've ever tried. It wasn't just the usual pan spatter you get when you're cooking up your last few strips of bacon. fat was shooting out like a pressure washer hose.
What I'm getting at is is it normal for meat to be totally different than its reputation? Or was this water buffalo just particularly obese?

I would ask the butcher or supplier what it is mixed with. I don’t believe it should be that greasy unless fat was added
Yeah that is odd. I would assume it has added beef fat. But there’s other possibilities too, when it’s ground meat it’s easier to manipulate.
Maybe they made a bunch of 97% lean and only a few packages of the fattier mix that you got.
Why don’t you call the people and ask them?
