

Hello! I defrosted a frozen octopus that I bought earlier. When I cut open the head, I found a white, ball-shaped object inside, as well as an orange-colored part that looks similar to fish roe. I’d like to ask what these two things are and whether they are edible. If they are edible, do they need to be cut open or soaked and cleaned in a specific way? Thank you!

The last time I found a ball in my octopus, it was a pearl. No kidding. Perhaps…. A giant pearl. As for the roe, octopus dont have ‘roe’. Looking at their biology, is this the digestive gland?
Is the ball shaped object squishy? Octopi have egg sacs a lot like that. The other part I believe is just their organs

The large white sac is the roe. The orange organ is the liver. The roe is good to eat, the liver not so much.
The roe is classically poached whole, cut into pieces, and scented with citrus zest. It will turn out mild, rich and grainy-textured, like tiny hard-boiled eggs. You can control the texture with the time and temperature you poach, just like with any eggs. But freezing permanently changes eggs, so you might have trouble getting the exact results you want. Should still taste fine.
