1/2 cup (125ml) mirin

1/2 cup (125g) soy sauce

One 2-inch (5cm) piece of fresh ginger, peeled and grated

Two garlic cloves grated

Tablespoon of Asian chicken bouillon powder

Tablespoon of veggie oil

3 pounds boneless chicken thighs cut in half or thirds, fat trimmed away

—-Toss thighs in marinade in ziplock. Marinate up to four hours.

Sprinkle with kosher salt (optional) and place in single layer in air fryer. Cook at 400F for about 15-17 minutes til nice and charred.

I prepped it so I can eat lettuce wraps, rice bowls and salads this week. I ate three thighs solo so I don’t have a plated photo. 😆

    50g+ carbs, all sugar, in 1/2 cup mirin. Not keto friendly.
