The bread is good, but the texture seems very different from the one showed in the tiktok. My crumb isn’t stringy like hers (despite 30 min of kneading in my kitchenaid). I followed the recipe and the process to a T. I used a 13% protein flour, the one I usually use for challah and brioches (which come out very stringy each time).
Do you guys have any idea what went wrong here ?

I have never heard of this bread, but it looks amazing to me.
My Instinct and experience suggest under-developed gluten in the mixing stage. Again hard to be sure of course but perhaps the dough was not fully developed to adequate windowpane.
I will say your bread does look great!
This is shokupan. I wouldn’t call it “viral” bread as it’s been around for a very long time.
Does grilling it change the texture?
Did you only mix on speed 2?
I know kitchenaid suggests that you only knead at 2 but my experience and some recipes I read mentioned that to get the marshmallowy texture you need more vigorous kneading at a speed up to 6.
For example the shokupan recipe suggests 2 minutes at 2, then 4 minutes at 4, then 2 minutes at 2, then 4 minutes at 4, then 3-6 minutes at 6. I’ve got pretty good result with that. See https://www.justonecookbook.com/japanese-milk-bread-shokupan/#wprm-recipe-container-141911
From my experiences, I don’t like egg in my shokupan because I find it affects the crumb like what you have posted, a little too spongy texture when it should be ultra soft with long gluten strands. Maybe try substituting the egg with just more milk?
The bread at Canes is just texas toast. It’s also the second-worst item they serve, after the actual chicken
