This was a year or so ago, I decided to do brisket in my kettle. My dad (RIP) told me it was not a good idea so I definitely had to do it.

I ran in and out the house a lot, adjusting vents to get the right temperature and I learned a lot from the process.

It wss not perfect but it was delicious and my guests raved about it and almost took all the left-overs home.

Brisket, as a cut, is just difficult to get here so I just need to plan for another go.
