LOL this is exactly how my cook looks and i always thought i was doing things unorthodox. i wasn’t about to buy a vortex or a basket but always thought about it. I always feel some shouldn’t be that close to the coals and it bothers me the whole time when i leave it for at least about 40 minutes before checking again. sometimes i’ll pile the chicken up on top of each other which i do with thighs because i can’t get them to all fit. then rearrange them when i open it up, and then do a final sear at the end direct on coals with the ones that show it didn’t get cooked much.
