Simit – Turkish bagel
Start your sehri with the perfect golden, sesame-crusted simit! Crispy on the outside, soft and chewy on the inside, this Turkish bread pairs perfectly with cheese, olives, and honey. A wholesome way to fuel up for a day of fasting.
Ingredients
* 500 g all purpose Flour
* 1/2 tsp Salt
* 2.5 tsp Sugar
* 2.5 tsp Instant Yeast
* 150 ml Milk lukewarm
* 150 ml Water lukewarm
* 150 g Molasses
* 4 tbsp Water
* 200 g Sesame Seeds
Method:
Combine the flour, salt and sugar in a large bowl/bowl of a stand mixer.
Add instant yeast at the opposite end to the salt.
Slowly add the milk and mix in, then slowly add water bit by bit. Do not add it all at once as you may not need it all.Knead for 10 minutes in a stand mixer or 15 minutes by hand.
Then put the dough in a lightly greased bowl, cover with a damp cloth and leave to rise in a warm place for an hour.Lightly toast sesame seeds in a dry pan till slightly colored.
divide into portions.
Roll the dough pieces into long cylindrical rope shapes
Then twist together and form into a loop
The ends will need to be pressed together firmly. I used a little water to seal.
Mix molasses with water in a large dish
Dip each simit in the molasses and then into the toasted sesame seeds. Dip the Simit in the molasses and then in the sesame seed. leave to rise for another hour in a warm place.
Heat oven to 200 °C and bake for 16 – 18 minutes.
