I made this today and it was great!
Put frozen shrimp in a bowl with whatever seasonings you enjoy and microwave for 3 minutes.
Remove, drain, and dry shrimp. It's ok if they're a little undercooked.
Put diced celery and peppers in a nonstick pan and saute with a tsp water or a spritz of oil for a minute. Add egg whites. Scatter shrimp and cheese over egg whites. Season with salt and pepper. When egg is opaque and firm but not dry place in wrap, add sauce and enjoy.
I made two of these, one for me and one for my husband with extra cheese in his. I'd use more shrimp next time for a boost in the protein but overall it was great. Very loosely inspired by Vietnamese shrimp and egg crepes. Bánh xèo.
