On my last visit to Pittsburgh I ran into a bit of a winter storm and was inspired to make some sort of soup and i was craving something in the realm of chowder! So we headed to the strip district looking to be inspired by some delicious ingredients!
Inspired I was! From delicious freshly baked bread to amazing cheese and to round it out some phonemail Spanish style chorizo! With these ingredients i was ready to take the classic Potato Leek Soup!
And to brighten the whole dish up I make a simple Apple Gremolata inspired Apple and herb salad that I put on the soup! Thats right! no need to have the salad on the side when you can have it right on top! brighten up, lighten up and freshen up your rich delicious soup so that you can keep going back for more and more while staying warm!
