Mussels used to be a winter delicacy because they were gritty in summer. Not anymore. Farmed mussels are affordable and readily available almost year round now. In this video I’m quickly explaining how to clean mussels and then I’m cooking them two ways: in a white wine sauce and in tomato sauce.

Mussels in White Wine Sauce:
Ingredients per portion:

1 lbs live mussels cleaned
1/2 – 1 cup White Wine
1 tbs Butter
2 tbs Olive Oil (use the good stuff for better flavor)
2 tbs chopped italian parsley
1 – 2 cloves garlic, minced
1 bay leaf
1/2 onion or small shallot, minced

Method:
➡️ heat the olive oil in a pot. Add the onion and sautee until translucent (2 – 4 minutes)
➡️ Add garlic, parsley, bay leaf and butter. Sautee for another minute.Make sure the garlic doesn’t burn
➡️ deglaze with white wine. Simmer until reduced by half.
➡️ Add the cleaned mussels, cover and cook for about 5 minutes on medium or until the mussels have opened
➡️ Serve immediately with a piece of crusty white italian or french bread

Mussels in Tomato Sauce:
Ingredients per portion:

1 lbs live mussels cleaned
a shot of White Wine to deglaze (optional, can be replaced with water, broth or abble juice)
1 tbs Butter
1 tbs Olive Oil
1 tbs chopped italian parsley or basil, optional
1 – 2 cloves garlic, minced
1/2 onion or small shallot, minced
1 bay leaf
1/2 cup of crushed tomatoes. Thin with water if very thick

Method:
➡️ heat the olive oil in a pot. Add the onion and sautee until translucent (2 – 4 minutes)
➡️ Add garlic, parsley/basil, bay leaf and butter. Sautee for another minute. Make sure the garlic doesn’t burn
➡️ Deglaze with white wine, broth or simply add the tomatoes
➡️ If not done so already, add the tomatoes
➡️ Add the cleaned mussels, cover and cook 5 minutes on medium or until the mussels have opened
➡️ Serve immediately with a piece of crusty white italian or french bread
