Make some breakfast sandwiches with egg/sausage/cheese and freeze them. Wrap in a wet paper towel and microwave them to reheat. Or make egg frittata muffins with spinach/bacon/cheese and freeze those.

Eggs last past the expiration date. Sometimes up to 3 weeks or more after. Plate an egg in a cup full of water. As long as the egg is lying flat on the bottom, or even just touching the bottom the egg is still ok to eat. If it is floating I wouldn’t advise it. Just google how to check if an egg is still good if you are interested.

The “cook and freeze” suggestions for sammiches and muffins are great. Raw eggs freeze well too, but you have to thaw to use, and it’s more process for the trade off.

Some good ideas, with the burritos and so on, but you can also simply freeze them. Obviously you won’t but the whole egg in the freezer but you crack them, put them in a ziplock bag and there you go. Depending on your needs you shall separate whites and yolks, or you pre scramble them. Try to freeze them as flat as possible and then when in need, thaw them in the fridge.
This way they hold up to 8 months.

Eggs freeze well in breakfast sandwiches or as egg bites and in breakfast burritos. They are such a key part of my households ability to grab and go breakfast! I get them from my neighbor with chickens so I’m never one to waste eggs! Baked goods are another good way to use up eggs without eating copious amounts of just eggs. Same for homemade mayo (which is the base of so many dressings I make)
