First time to bake macarons using Italian meringue. Please help me find out what did I do wrong for them to come out like that 😅 the top part isn’t as inflated as I expected them to be

    If they spread out quickly when you pipped them onto the sheet it could be an over mixing issue, but only slightly.

  2. They look good! I usually pipe my macarons flat because I like the look. I also feel like it’s easier to get fuller shells when they’re not as tall. Maybe pipe them when the batter is a tad bit thicker to get the shape you want.

    Overmacaronage, maybe try sifting ur almond flour or using more fine almond flour too for smoother macarons

    Probably just slightly over-mixed. Also keep in mind that as you work with the batter post macronage it has the same deflating effect. So better to err on the side of slightly under mixing.
