Tamarind Pulp (इमली का पल्प) – ⅓ cup
Jaggery (गुड़) – 2 tbsp
Pani Puri Masala (पानी पूरी मसाला) – as per taste
Water (पानी) – 500 ml + 1 liter
Ice Cubes (आइस क्यूब्स) – 2-3 nos.
Instructions:
Blend mint, coriander, ginger, green chilies, tamarind pulp, and jaggery with 500 ml of water.
Strain the mixture and add pani puri masala to taste.
Mix in 1 liter of cold water and add ice cubes for extra freshness.
Keep it chilled until serving.
Step 3: Prepare Tamarind Chutney (Sweet & Tangy Flavor Boost!)
Ingredients:
Dates (खजूर) – 250 grams (seedless)
Tamarind (इमली) – 75 grams (seedless)
Jaggery (गुड़) – 750 grams
Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च) – 1 tbsp
Cumin Powder (जीरा पाउडर) – 1 tbsp
Black Salt (काला नमक) – 1 tsp
Ginger Powder (सौंठ) – ½ tsp
Black Pepper Powder (काली मिर्च पाउडर) – A pinch

Water (पानी) – 1 liter
Instructions:
Boil dates, tamarind, and jaggery in 1 liter of water until soft.
Blend the mixture until smooth and strain.
Mix in spices (red chili powder, cumin powder, black salt, ginger powder, black pepper powder, and salt).
Cook for a few more minutes, then let it cool.
Store in an airtight jar in the refrigerator.

Karkara Aata (करकरा आटा) – ¾ cup
Baarik Rava (बारीक रवा) – ¼ cup
Papad Khar (पापड़ खार) – ⅛ tsp

Mix karkara aata, rava, and papad khar in a bowl.
Gradually add water and knead into a firm dough.
