Happy Thursday! Here is what I made yesterday to get my fiancé and I through the remainder of this week.
Ingredients & brief explanation of steps below
1.5lbs chicken breast (cut in half and marinated in Mojo marinade overnight)
12oz bag of broccoli (seasoned with olive oil, salt, pepper, garlic powder, parmesan cheese)
24oz bag honey gold baby potatoes (quartered and seasoned with olive oil, salt, pepper, garlic powder, italian seasoning, parmesan cheese)
15oz bag frozen corn (added a bit of butter to this)
I started cooking my broccoli first since it was easy to throw in the air fryer (375°f for 5-8 minutes), season and start. I put my chicken in a heated pan with some olive oil and turned them occasionally until 165°f internal temp. Once the broccoli was done I took it out threw my quartered potatoes in the air fryer, seasoned and did 400°f for about 10 minutes, shaking multiple times to turn them. Threw the bag of frozen corn in the microwave and added some butter to the bag when it was done. Assembled my preps, washed and sliced some strawberries so they get eaten, and that’s it!
This took me about an hour and a half between prep, cooking, and cleanup.
